This recipe uses one whole avocado. One avocado contains 17 grams of carbs, 4 grams of protein, and 30 grams of fat. It is an excellent source of copper, folate, potassium, vitamins C, E, K, B2, B3, B5, and B6. Avocados are also a good source of magnesium and manganese. A cross-sectional, population-based survey found that higher intake of B vitamins is associated with lower rates of stress symptoms, anxiety, and depression.

Recipe Variations

With minimal ingredients, there aren’t many ways to change this recipe. However, you can always add to it! Here are a couple of substitutions to keep in mind.

  • Bread: This recipe is perfect with sourdough, whole wheat, or your favorite gluten-free bread. Also, if you are trying to maximize your protein intake, then using a protein-packed bread is another great option.
  • Tofu: If you don’t have any tofu on hand, then you can use a simple smashed chickpea recipe instead.

That being said, you can definitely meal prep the scrambled tofu ahead of time and store it in an airtight container in the fridge for 3-4 days. This way, it’ll only take five minutes to make whenever you’re in the mood for a piece of protein avocado toast.
