Vegan soups stored in the refrigerator can last several days. Whereas plant-based soups stored in the freezer can last months.

Fridge Storage Tips

In general, vegan soups can keep in the fridge for about 3-5 days with no problem (in an airtight container). However, did you know that food stored in an airtight glass container keeps foods fresh longer? This includes vegan soup! Plant-based soup stored in the fridge in an airtight glass container could stay fresh for up to 5-7 days.

I always recommend checking the storage instructions for the specific tasty vegan soup you choose to make.

Freezer Storage Tips

Many plant-based soups can be frozen in a freezer-safe air-tight container and enjoyed later. In general, you should be safe freezing your favorite soup recipes for 2 to 3 months in the freezer.

Letting your soup cool on the counter and then in the fridge prior to freezing is ideal.

There are some exceptions. Anything with coconut milk in it may not fare well in the freezer. I have tried it a couple of times, and the soup doesn’t taste the same after it has been frozen and re-thawed.

Always follow the specific recipe’s suggested freeze-time recommendations.

After that, always remember that things like potatoes, broccoli stalks, cabbage, and cauliflower get added first. Items that wilt more easily, like spinach, for example, will be best when added towards the end of the cooking time.

For a veggie-based soup, there are a few options. A creamy white bean soup becomes rich by blending the ingredients to fake a creamy texture.
