Why You’ll Love This Recipe
- Quick: These cozy pumpkin spice donuts are ready in just 30 minutes. Does it get better than that
- Flavorful: With the perfect blend of cinnamon, ginger, nutmeg, and clove, these fall-flavored donuts are perfection.
- Pumpkin: Who doesn’t love pumpkin? Who doesn’t want all the pumpkin things in the fall?
Nutrition For Mental Health
One cup of pumpkin puree contains 19 grams of carbs, 7 grams of fiber, 7 grams of fat, and 3 grams of protein. It is an excellent source of vitamins A, K, and E, copper, antioxidants, and beta-carotene. Pumpkin puree is also a good source of iron, magnesium, riboflavin, potassium, and vitamins C and B6. One cup of pumpkin puree contains 209% of your daily needs of vitamin A.
I am fascinated by how nutrition impacts mental health. A meta-analysis found that dietary intake of beta-carotene and vitamin A is associated with lower rates of depression.
Ingredients + Notes
Along with these simple ingredients, you’ll also need a donut pan to make these baked pumpkin donuts. This is my favorite metal donut pan and silicone donut pan.

- Flour: These pumpkin pie donuts are made with all-purpose flour.
- Maple syrup: My favorite sweetener to use. It tastes amazing and adds to the moistness of these baked pumpkin donuts.
- Pumpkin puree: The star of the show, the most important ingredient. These wouldn’t be pumpkin donuts without the pumpkin, right?
- Oat milk: Using oat milk also adds to the sweetness of the donuts without adding refined sugar.

Substitutions + Variations
These pumpkin spice donuts are legit. They are so good. That being said, sometimes someone has an allergy, or maybe you can’t find a specific ingredient. Here are some recommendations for alternative ingredients.
- Sweetener: I used maple syrup in this recipe. It is my favorite sweetener to use. Since this recipe calls for a liquid sweetener, I would substitute it with another liquid sweetener if needed. Agave would work well, or liquid stevia could work, too. Just keep in mind that stevia, in particular, can impact the overall flavor.
- Spices: If you don’t want to combine your own spices, you could just use pumpkin pie spice.
- Flour: For a gluten-free alternative, I recommend using Bob’s Red Mill gluten-free 1 to 1 baking flour.
How To Make Pumpkin Spice Donuts

Would you like to save this?

- Scoop batter into donut pan with a small spoon. Alternatively, you can add the pumpkin spice donut batter to a piping bag and pipe the batter to fill the tray.

- Bake for 10-12 minutes, until a toothpick inserted comes out clean.
- Cool in pan for 5-10 minutes, then transfer to a cooling rack. Add your favorite toppings, such as maple glaze or cinnamon glaze.

Serving Ideas
These vegan pumpkin donuts are so good on their own, but maybe you want to make their enjoyment more of an experience. In that case, here are some toppings and recipe pairings to consider.
Toppings
- Glaze: My favorite glazes for these pumpkin spice donuts are this Maple Glaze and Cinnamon Glaze.
- Sugar: Keep it classic with a basic powdered sugar dusting or regular cane sugar.
Pairings
- Smoothies: If you’re looking for a refreshing smoothie to go with your pumpkin spice donut, then I recommend either this Strawberry Pomegranate Smoothie or Almond Butter Banana Smoothie.
- Cozy Drinks: Get cozy with a Matcha Oat Milk Latte, Golden Milk Latte, or Strawberry Matcha.
Storage Tips
These vegan pumpkin spice donuts store really well. That being said, if you are going to add a glaze on top, I recommend doing so upon serving. So, only glaze as many donuts as you can eat. Then, store these pumpkin donuts in an airtight container and then add the glaze when you’re ready to eat them.
- Room temp: These pumpkin spice donuts can be stored at room temperature (without toppings) in an airtight container for 1-2 days. Any longer than that, I recommend refrigerating them.
- Fridge: Store these tasty donuts in an airtight container in the fridge for up to 3-4 days. (If they last that long.)
FAQ
No, pumpkin spice is made up of four spices including cinnamon, nutmeg, cloves, and ginger.
The closest flavor to pumpkin spice would be making your own version at home by combining cloves, cinnamon, nutmeg, and ginger.
Yes, Starbucks pumpkin spice topping is just cinnamon, ginger, cloves, and nutmeg. However, the pumpkin spice latte is not vegan because the pumpkin spice sauce contains condensed skim milk.

These were perfect! My only complaint is that I wish they were a bit more dense. Is that really a complaint though?
These are one of my favorites too!
