How To Make Mashed Purple Sweet Potatoes

  1. Add sweet potatoes to a pot and cover with water. Bring to a boil and simmer for 15-20 minutes until potatoes are fork-tender.
  1. Drain potatoes and add to a mixing bowl. (Alternatively, you can use the pot they were cooked in.) Add oat milk, maple syrup, ground ginger, cinnamon, salt, and cardamom.

One of my favorite times to serve mashed purple sweet potatoes is during the holidays. You can serve it with other holiday sides like my vegan quinoa stuffing, green bean cranberry dish, vegan mashed potatoes, and vegan gravy. This recipe is also awesome with the best vegetable pot pie and desserts to finish it off, including eggless pumpkin pie and vegan apple pie. Don’t forget beverages everyone can enjoy, like my pomegranate water, cranberry lemonade, or orange spritz mocktail.

Storage Tips

Vegan mashed sweet potatoes can be kept in the fridge for up to 5 days. If you made enough for a crowd and can’t polish them off before then, seal them up and stow them in your freezer, where you’ll have up to 6 months to use them up. You could even separate them into portions for easy meal prep!

  • 4 cups purple sweet potato, cubed + water for boiling
  • 1/3 cup unsweetened oat milk
  • 2 tablespoons maple syrup
  • 3 teaspoons fresh ginger, minced (using a citrus zester works well)
  • 1 1/2 teaspoons ground cinnamon
  • 1/2-1 teaspoon of cardamom
  • 1 teaspoon salt, to taste
