  1. Preheat the oven to 425°F/220°C and line a baking sheet with parchment paper.
  2. Add all ingredients to a large bowl and toss until potatoes are well coated.

  • 3 pounds Russet potatoes (or Gold potatoes), (~1.3kg) washed and chopped into 1-inch cubes (no need to peel)
  • 2 tablespoons avocado oil
  • 1 tablespoon Italian seasoning
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons chives, diced
