Like coffee, coffee boba has that bitterness, but if you’re a coffee lover, you’ll be delighted. With the milk added in, it becomes sweet and creamy all at once, making it a distinctive contrast in flavors. The brown sugar boba is like a boba latte, hot or cold. It’s truly something special and a great way to enjoy boba if you prefer coffee to tea.

- Tapioca pearls: The chewy tapioca pearls at the bottom of your glass are great for texture and sweetness.
- Coffee: I used espresso for this recipe, but cold brew would work well too.

Variations + Substitutions
Making coffee boba is a simple process. That said, you can feel free to vary the recipe as needed.
- Sweeteners: Can sugar, brown sugar, coconut sugar, maple syrup, or even stevia will work in your boba coffee recipe. Keep in mind each one has a slightly different flavor.
- Milk: No oat milk? No problem! You can reach for your favorite milk of choice to add that creaminess to your drink, whether it’s almond milk or any other type of milk.
- Coffee: I used espresso in this recipe, but if you don’t have it, you can use instant coffee or grind up coffee beans and quickly brew them for this boba coffee. Additionally, dalgona coffee boba would also work.
- Grass Jelly: Grass jelly can also stand in for your instant tapioca pearl instead. It will give your bubble coffee recipe a slightly fruity note.

- Make The Boba: Pour two cups of water into a saucepan and bring to a boil. Then, add the tapioca pearls and boil for five minutes (until the pearls are all floating to the top). (If you don’t have quick-cooking tapioca pearls, follow your package instructions.) Scoop floating pearls into a metal mesh strainer and rinse with cool water.




- Make The Coffee: Make two shots of espresso. Add one teaspoon of cane sugar to one of the shots and stir until dissolved.


- Assemble The Coffee Boba: Scoop boba into a serving glass. Then, add ice on top of the boba. Next, pour oat milk over the ice, followed by the coffee. Finally, stir and enjoy with a glass boba straw.
