I cannot get enough pumpkin purée in the fall and winter! Pumpkin is a nutritious winter squash high in vitamins and minerals. It is rich in vitamins A, K, and E and copper. It is also a good source of iron, magnesium, potassium, and vitamins riboflavin, B6, and C. A cross-sectional study found that adults who consume a higher amount of vitamin K in their diet have a lower presence of depressive symptoms.

You probably already know that lemons are rich in vitamin C. They are also a good source of potassium and vitamin B6.

This recipe for pumpkin lemonade is pretty basic, so there’s not much to change, but here are some simple options.

  • Lemon juice: If you don’t have fresh lemons on hand or can’t find them, you can use bottled lemon juice. I recommend using organic lemon juice sold in a glass bottle.
  • Cinnamon: Add a pinch of cinnamon into the pitcher of pumpkin lemonade.

How To Make Pumpkin Lemonade

  1. Pour water, lemon juice, maple syrup, and pumpkin into a large pitcher and stir thoroughly until well combined. 
  2. Add cinnamon sticks to the pitcher, or add a cinnamon stick to each glass and enjoy!

Pro Tip: The best way to Juice a Lemon

This recipe calls for one and a half cups of freshly squeezed lemon juice per six servings, so it’s safe to say you may get a little sick of squeezing lemons by the night’s end. 

To get the most lemon juice out of your fruits, roll them on a counter using the palm of your hand and press down with firm pressure. The rolling action helps to loosen the liquid and get more juice out of each lemon.

Serving Ideas

Serve this winter lemonade in a large glass pitcher with a generous handful of lemon slices and maybe a few cinnamon sticks for good measure. Even though this is a fall recipe, add a decent amount of ice cubes or crushed ice for a refreshing drink.
