  • Herbs: I love using fresh thyme, but you can sub in any fresh herbs from rosemary to basil!

How To Make Roasted Sweet Potatoes And Carrots

  1. Preheat oven to 400°F/200°C.
  2. Add carrots, sweet potatoes, and onion to an oven-safe baking dish. Pour avocado oil on top, followed by the remaining ingredients.
  1. Toss the vegetables thoroughly in the oil and seasonings until well combined.

  • 1 tablespoon dried thyme
