Servings Ideas

Citrus and arugula salad is great for a bountiful lunch or for serving guests. Plan your dinner menu with my dairy-free potato leek soup, pumpkin chili, or lentil carrot soup, then serve veggie pot pie. Refreshing pumpkin spice lemonade or my pomegranate-infused water complements it well, and for dessert, dairy-free apple pie is the ideal finish.

Storage Tips

Since this salad has avocado, it’s best to eat it quickly, within 24 hours, or else the avocado will turn brown and the arugula will get soggy. If saving any for later, keep it free of dressing to prevent the whole thing from becoming wilted.
