Nutrition For Mental Wellbeing

Blackberries are an excellent source of fiber and antioxidants, such as vitamin C. They also contain small amounts of magnesium, iron, and calcium.

An animal study found that the right dosage of blackberry juice can have an anxiolytic-like effect on the animals, similar to diazepam. However, more studies are needed.

Substitutions + Variations:

Missing an ingredient or need to adjust something? Here are some tips to help!

  • Flour: If you are gluten-free, swap the flour with a gluten-free variety. Make sure the one you choose has a binder, or you’ll need to add xanthan gum.
  • Sweetener: You can use added sweeteners such as sugar or a sugar substitute, though honestly, you won’t miss out if you use the bananas, applesauce, and maple syrup.
  • Salt: Regular iodized salt can be substituted if you don’t have pink salt.
  • Berries: This recipe calls for fresh, juicy blackberries. If they are out of season and you can find frozen ones, then go for it!

  • Smoothies: Add a berry smoothie to get more nutrients and a more filling breakfast that will keep you satiated until lunch.
  • Drinks: Try an herbal tea instead of coffee for a healthier pick-me-up that pairs beautifully with the blackberry flavor of these muffins.

Storage Tips

FAQ

Moist muffins are what you want, and to get them, the key is to keep wet and dry ingredients separate at first. Mix dry ingredients together and wet ingredients together before combining them. This should ensure you have that perfectly moist muffin texture!

Traditionally, eggs are used in muffins to bind them together. With these vegan blackberry muffins, using a flaxseed egg serves the same purpose.

By far, the biggest rookie mistake you can make is overmixing your muffin batter. Once you combine the wet and dry ingredients together, aim to only stir it for about 15 to 20 strokes maximum. It’s ok if the batter is a little lumpy!
