Delicious banana blackberry muffins are just what you need to start your day. The perfect texture, along with pops of ripe blackberries and creamy banana, makes for a sweet yet healthy breakfast, even on the go, or a welcome snack in the middle of your day.
Preheat oven to 350˚F/175˚C, prepare flax egg, and set aside.
Add banana to a medium bowl, mash, add remaining wet ingredients, and mix thoroughly.
Add dry ingredients in a large mixing bowl. Pour wet mixture over the top and thoroughly combine. (Don't overmix!)
Fold in blackberries and prepare muffin pan, lining it with cupcake liners. Alternatively, spray muffin pan with oil.
Scoop batter into prepared muffin pan and bake for about 20 minutes, OR until an inserted toothpick comes out clean.
Let muffins cool in pan for a bit before you flip them on a cooling rack and enjoy!
