And while they capture your heart (and your taste buds), you can count on vegan cake to not have a few of the classic items that most cakes tend to have in them.
- Eggs: Obviously, eggs are not part of a vegan diet. In cakes, they are used to add moisture and bind the batter together. But you can make delicious vegan cakes without them by using things like mashed bananas, flax eggs, or even a store-bought egg substitute.
- Dairy Milk: Regular dairy milk is often an ingredient in cake, but for vegan versions, you can use any plant-based milk that you like. I often choose almond milk or oat milk, but soy milk, coconut milk, or even vegan buttermilk are all perfect.
- Dairy Butter: Dairy-based butter is a hard pass, but you can swap it out with coconut oil or a vegan butter to have the same effect in your vegan desserts.

Many of the frostings are vegan as well which can save you time. And if you don’t have any of the vegan versions of ingredients you’d add to the cake mix, you can simply mix it with soda.
Stored with plastic wrap around it, your vegan cake should be good for about 5 days in the fridge. Like any kind of cake, the more time it sits in there, the more it loses its awesomeness so aim to eat it quickly or freeze it if you can.
It depends on the flour and baking powder you use as to whether your cake contains gluten or not. If you need your cake to also be gluten-free, you will need to use gluten-free flour and baking powder.
Some vegan cakes will need to be refrigerated while some won’t. If you make a vegan coconut cream cake with fresh strawberries on top or a vegan carrot cake, you will definitely want to keep any leftovers in the fridge. But if you made a vegan coffee cake, it would probably be fine on the counter for a few days though will last a little longer in the fridge.
