- 3 red bell peppers, seeded and quartered
- 10 vine tomatoes, sliced
- 1/4 cup basil, packed
- 1/4 cup red onion, diced
- 6 cloves garlic, minced
- 1 teaspoon oregano, dried
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
Preheat oven to 400°F.
Line baking pan with silicone baking mat or parchment paper.
Bake tomatoes, bell peppers, garlic, and red onion for 30 minutes or until they are well roasted.
Remove from oven and let cool.
Add all ingredients into a food processor and blend until your desired consistency is reached.
