Add pomegranate seeds to a glass jar. (Optional: Mash pomegranate arils with a muddler to release some of their juice.)
Pour in chia seeds, pomegranate juice, maple syrup, and almond milk and stir until well combined. Place lid on the jar and let sit in fridge for at least 30 minutes.
Serve with fresh pomegranate arils on top.
Notes
Storage TipsStore your pomegranate chia pudding in an airtight glass container in the refrigerator. If you make it in a jar to start, it makes storing any leftovers super easy! You can store it in the fridge for 3-4 days. Keep in mind that the chia seeds will continue to soak up liquid, so when you are ready to eat it, I recommend adding another tablespoon or so of milk and giving it a good stir.
