This easy lemon guacamole without tomatoes. Made with perfectly ripe avocados, onion, cilantro, lemon juice, and spices. This guacamole is the perfect topping or dip and comes together in just 5 minutes!
Cut avocado, remove seeds, and add to a medium bowl. Smash it using a fork (leaving it slightly chunky).
Add remaining ingredients and thoroughly combine.
Serve with tortilla chips or on vegan tacos!

Pro TipsThe main ingredient is creamy avocados. The perfect avocado can transform your guacamole from good to the best guacamole you've ever had. To make sure you get perfectly ripe avocados, they should be ever so slightly soft. If you pop the stem nub off of an avocado, it should have a dull green-brown color underneath. If it’s bright green, then it probably isn’t ripe.Storage TipsPlace leftover guacamole in an airtight glass container such as a Le Parfait jar. Use a spoon to compress the guacamole, removing any air pockets. Add about half an inch of water to the top. (This will help keep it fresh.) Secure the lid and store it in the fridge for 2-3 days for maximum freshness. When you are ready to enjoy it, drain the water off the top, give it a stir, and enjoy!
