- 3 sweet potatoes, cubed (3 medium sweet potatoes is roughly 1 pound)
- water
- Pinch of salt
Wash the sweet potatoes thoroughly.
Cut sweet potatoes into 1-inch cubes.
Add sweet potatoes to a medium pot.
Cover the sweet potatoes with water bringing the water line an inch above the potatoes.
Add salt to the pot and bring to a boil. (This should take about 7-minutes.)
Turn down to a simmer, cooking for an additional 12-15 minutes. (Until fork tender.) The exact timing will vary depending on what size sweet potato cubes you cut as well as your elevation.))
Drain water and enjoy!
