This wholesome vegan cabbage soup is easy to make and delicious as can be. This plant-based soup is packed full of cabbage, potatoes, onions and great northern beans. Great northern beans are a good source of folate, protein and thiamin and gold potatoes are a great source of vitamin C and B6.

Vegan Cabbage Soup

This wholesome vegan cabbage soup is easy to make and delicious as can be. This plant-based soup is packed full of cabbage, potatoes, onions and great northern beans. Great northern beans are a good source of folate, protein and thiamin and yukon gold potatoes are a great source of vitamin C and B6. 

Ingredients  

  • 1 tablespoon avocado oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 1/2 teaspoon rosemary
  • 1 1/2 teaspoon thyme
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon Himalayan salt
  • 6 cups water + vegetable bouillon
  • 1 small head of green cabbage, roughly chopped
  • 3 large gold potatoes, diced
  • 1 15.5 oz can great northern beans, drained + rinsed
  • fresh basil and green onions, for topping

Instructions 

  • Heat oil in medium pot and sauté onion for 4-5 minutes.
  • Add in garlic, herbs, and spices and cook for another 1-2 minutes.
  • Pour in remaining ingredients and simmer for 15-20 minutes, until the cabbage and potatoes become soft.
  • Serve with finely sliced basil and green onions on top.
