Vegan Cabbage Soup
This wholesome vegan cabbage soup is easy to make and delicious as can be. This plant-based soup is packed full of cabbage, potatoes, onions and great northern beans. Great northern beans are a good source of folate, protein and thiamin and yukon gold potatoes are a great source of vitamin C and B6.
Ingredients
- 1 tablespoon avocado oil
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 1 1/2 teaspoon rosemary
- 1 1/2 teaspoon thyme
- 1/2 teaspoon ground black pepper
- 1 teaspoon Himalayan salt
- 6 cups water + vegetable bouillon
- 1 small head of green cabbage, roughly chopped
- 3 large gold potatoes, diced
- 1 15.5 oz can great northern beans, drained + rinsed
- fresh basil and green onions, for topping
Instructions
- Heat oil in medium pot and sauté onion for 4-5 minutes.
- Add in garlic, herbs, and spices and cook for another 1-2 minutes.
- Pour in remaining ingredients and simmer for 15-20 minutes, until the cabbage and potatoes become soft.
- Serve with finely sliced basil and green onions on top.
