1. Sautée: Add the minced garlic and diced onions to a large pot with 1/2 cup of water and cook until semi-translucent.

2. Add: Pour in 10 cups of water and add the vegetable bouillon, tomatoes, carrots, potatoes, yellow summer squash, lentils, and all spices, and herbs into the pot.

 Turn to boil.

3. Simmer: Once it starts to boil, turn down and let simmer for 20 minutes.

4. Add: Towards the end of the 20 minute simmer time, stir in the spinach.

Serve with fresh toast and a salad.
