Ingredients

1. Heat a large Dutch oven over medium heat and add avocado oil.

Add the onions, garlic, and sauté for 5-6 minutes, stirring occasionally.

2.Stir in the zucchini and yellow summer squash and cook for another 5-6 minutes.

3. Stir in tomato paste, spices, herbs, and salt and sauté for another 2 minutes.

4. Pour in water, bouillon, and diced tomatoes. Bring soup to a boil.

5. Reduce to a simmer, add in lasagna noodles and lentils, and.......

cook for 15-20 minutes, stirring occasionally.

6. Serve soup with a dollop of vegan ricotta cheese on top.
