How this chia seed pudding came to be

I became enamored with purple sweet potatoes after seeing Lexi and Beth of Crowded Kitchen’s Purple Sweet Potato Pie. As a result, I made a few recipes using purple sweet potatoes. They have such a wonderfully sweet flavor that can’t be beat. This vegan chia seed pudding recipe is made using my Cardamom Mashed Purple Sweet Potatoes recipe as the base. Let me tell you, this chia seed pudding recipe will make your tastebuds dance! It is by far one of my favorite recipes that I’ve ever made. Now you can enjoy it too.

This recipe makes three servings, perfect for making ahead of time and enjoying it throughout the week. Just store it in an air-tight container in the fridge. It’s perfect for breakfast, dessert, or even a snack so enjoy it whenever you like!

Purple Sweet Potato Chia Seed Pudding

The best chia seed pudding ever made. It’s easy to make with just five ingredients. It’s gluten-free, dairy-free, and vegan (obviously). 

Ingredients 
 

Instructions 

  • Add all ingredients into a bowl and thoroughly mix. 
  • Scoop into mason jars or Tupperware containers. 
  • Place in fridge overnight and enjoy in the morning!
