  • Water: Water might sound obvious, but there is a delicious liquid variation that I share below.
  • Maple syrup: This liquid gold is a delicious sweetener for these lemonade popsicles. Using a sweetened liquid means that it dissolves easily and thoroughly.
  • Lemon slices: A wonderful addition to these homemade lemonade popsicles. Alternatively, you could add fresh lemon zest putting a creative twist on this lemon ice pop recipe.

Best Popsicle Mold

In addition to the ingredients needed to make this lemonade popsicle recipe, you will also need a popsicle mold and popsicle sticks. If you don’t have ice pop molds, you could use paper cups, such as Dixie cups, or even ice cube trays. Here are my top recommendations for popsicle molds. 

Step-by-step Instructions

  1. Squeeze lemons to make fresh lemon juice!
  2. Stir together lemon juice, maple syrup, and water.
  3. Pour into a popsicle tray and add a couple of lemon slices to each mold (optional). (For a fun twist, add in your favorite fresh berries.)

Lemonade Popsicle Variations

  • Coconut Water: If you want your lemon ice pops to be extra hydrating, you could substitute coconut water instead of water. This will make these homemade ice pops have a coconut undertone, so if you’re going for the taste of lemonade, I wouldn’t recommend this variation.
  • Yogurt: Wanting a creamy popsicle? For creamy lemon popsicles, add coconut milk or vegan plain Greek yogurt in lieu of water.
  • Berries: Adding additional fruit to these vegan ice pops is easy to do and can add another flavor to the mix. Strawberries, blueberries, fresh raspberries, or blackberries would be my top picks! 
  • Sweetener: I love using maple syrup as a sweetener, but you can definitely use regular white sugar or cane sugar. I would dilute it in one cup of hot water or warm water for the best results. (The recipe calls for two cups of water, so in this case, do one cup hot or warm to dilute the sugar and then combine it with another cup of cold water. For sugar-free lemonade popsicles, I recommend stevia or monk fruit sugar.
  • Fresh Herbs: Fresh mint tastes divine paired with the lemon flavor of these popsicles. For a more interesting combo, try some fresh basil!

These delicious frozen treats can be kept in the freezer for at least a month. Store-bought popsicles can keep in the freezer for a longer time because they are factory sealed. That being said, there’s nothing like making your own homemade popsicles. 

To keep them fresh longer, (and avoid freezer burn), store them outside of the molds. After they are thoroughly frozen, transfer them to an air-tight freezer-safe storage container.

Disposable cups of some sort, or really small food storage containers, could be used as popsicle molds. Once your ice pops are made, run the bottom and sides of the container(s) under hot water. This will help the popsicle release from the mold.
